Drink of the Week:  Grilled Pineapple & Jalapeño Margarita

This week’s featured cocktail involves some grilling before you can taste this sweet and spicy margarita! This week’s drink of the week is a Grilled Pineapple and Jalapeño Margarita from Salty Mermaid Bar & Grille in North Wildwood.

Sondra started the process by grilling a pineapple slice and a seeded jalapeno until it has a nice char, then let it cool down. In a cocktail shaker, she muddled a quarter slice of the pineapple with a few slices of jalapeno pepper to bring in some heat. Sondra added ice, Añejo tequila, Cointreau, pineapple juice, and lime juice and shook well. She coated the rim in lime juice, then dipped it in her seasoning - mixed equal parts kosher salt and Tajín seasoning. She poured the drink, garnished it with a slice of grilled pineapple, then it was ready to be served!
